Apple Cinnamon Overnight Oats

Why this recipe works

Grating the apple instead of dicing it lets the juice soak into the oats overnight, so every spoonful tastes of apple. Greek yogurt adds protein and keeps the texture thick rather than soupy.

Method

  1. Stir together. In a large bowl combine the oats, milk, yogurt, grated apple, chia, maple syrup, cinnamon, vanilla and salt.
  2. Portion. Divide between four jars or containers with lids.
  3. Chill. Refrigerate at least 6 hours or overnight so the oats soften completely.
  4. Top and eat. Stir, loosen with a splash of milk if thick, and top with sliced apple, walnuts and a drizzle of maple syrup. Eat cold or microwave 1–2 minutes.

Tips & swaps

  • Pears work just as well as apples later in the fall.
  • For a warm version, heat on the stovetop with 1/4 cup extra milk.
  • Use certified gluten-free oats if needed.
